Asian-Style Omelette with Soy, Ginger & Scallions by laleshii
A light and fluffy omelette infused with bold Asian flavours from soy sauce, sesame oil, fresh ginger, and scallions. Ready in under 10 minutes for a satisfying breakfast or light meal.
Ingredients

3 large eggs

1 tbsp soy sauce

1 tsp sesame oil

1 tsp fresh ginger, finely grated

2 scallions, spring onions, thinly sliced

1 small red chilli, small, finely sliced (optional)

1 tbsp vegetable oil

1 tsp toasted sesame seeds, toasted

Small handful fresh coriander leaves, small handful

Crack the eggs into a bowl. Add the soy sauce and sesame oil, then beat well with a fork until fully combined and slightly frothy.

Stir in the grated ginger, most of the sliced scallions, and the red chilli if using.

Heat the vegetable oil in a non-stick frying pan or wok over high heat until shimmering.

Pour the egg mixture into the pan and let it set at the edges for about 20 seconds without stirring.

Using a spatula, gently pull the cooked edges toward the centre, tilting the pan so uncooked egg flows to the edges. Repeat until the egg is just set but still slightly glossy on top.

Fold the omelette in half or roll it up, then slide onto a plate.

Garnish with the reserved scallions, toasted sesame seeds, and fresh coriander. Serve immediately.
